Thé Sureau Ed.2022This edition was intended to show up with more fruity sweetness and altered tannin load. Local herbs and mild fermented first tea flushes from Darjeeling were used to maintain the long echoing wideness of flavours and keep the customers excited. Still very young on the maturity scale, the 2022 edition draws its lovers from the traditional sparkling wine community, where increased fruitiness is welcomed and open for an extension with strawberry liqueur or mango ice cream. Posca Sureau "tough"Our 'Posca Sureau' is an attractive garnish for any leafy salad. When sprayed, it leaves red beads and trickles on the food, adding an air of mystery. Our elderberry vinegar is made from fully ripe fruit clusters. We inoculate the alcoholic phase with our own vinegar cultures and store it on the mash for an extended period. This process ensures the comprehensive extraction of fruit aromas and the complete preservation of elderberry's valuable ingredients. TOUGH!For fans of 'real' vinegar flavour, we add a touch of our purified apple pomace vinegar. This adds a touch of colour and a hint of cheeky aggressiveness to bland dressings. BALZFELDER BLUT - FEMALEAn optimal year allows round, aromatic fruits full of juice to ripen. The coarseness of the secondary components recedes, making the liqueur a delicious sweet treat that adds a splash of color and a burst of flavor to desserts such as fruit salad or vanilla ice cream. Elderberry Mustard “Must á Sureau”Our mustard delicacies expand the culinary universe with an elderberry dimension for hot dishes. Mustard seeds ground to a powder in a stone mill are combined with unseasoned elderberry vinegar “Posca Sureau” to form the basis for a variety of mustard delicacies, currently available in “fresh,” “spicy,” and “hot” varieties. We vary the “tongue-touchiness,” the initial sensation on the tongue, with fresh or dried spices. The typical mustard spiciness on the palate is retained without being overpowering. MUST á SUREAU HOT (red)The hot version, with its chili coloring, is a major assault on the culinary receptivity of the connoisseur.
